It isn’t Sunday but I wanted to give a bonus recipe! In the last blog, I shared a recipe with some Thanksgiving flair! https://safesolutions.us/chickenandstuffing/

Well, I decided to come back and share this delicious side dish too! With Thanksgiving on the way, no such thing as too many recipes! This one makes for a great side dish to have on the table! It’s sweet and healthy! So I give you the quick and easy recipe for:

Honey Cinnamon Butternut Squash

Ingredients:

(Made for a family of 4)

1 whole Butternut Squash, cubed into 1 inch chunks

3 Tbsp Honey

2 Tbsp Olive Oil

Cinnamon (this is a to taste ingredient, so just have the whole shaker handy)

Nonstick pan spray

 

Instructions:

Preheat oven to 425 degrees

In large bowl add the squash chunks, honey and olive oil. Mix until all pieces are coated. Sprinkle in the cinnamon and mix until each piece has some on it.

 

 

Spray baking sheet with nonstick spray. Arrange chunks into single layer.

Bake for 45 to 50 minutes. The pieces should come out soft.

 

 

On their own they make an excellent and tasty side dish to turkey and stuffing. My kids have suggested adding marshmallows like we do on the sweet potatoes. Next time, I also intend to try adding some roasted pecans. With how soft this gets, the little nutty crunch would be a great addition! If you decide to try it, please tag us in a post!
