Another episode of SAFE Solutions Scratch Cookin’ Sunday!(Shared on a Monday)

Yesterday’s Sunday brought with it the first day of fall!🍁🍂 So while I know we live in Texas and that doesn’t mean much as far as weather, I still wanted to make something to create the feeling of fall! My favorite fall food is always the desserts, specifically the pies!🥧 I wanted to create a little pie influenced batch of breakfasts for the week. Hence the birth of Pecan Pie Muffins! WARNING! If anyone in your house finds out these are in the kitchen, they will never see breakfast time! You will need another batch! Luckily it is only a few ingredients and quick to make!

Ingredients:
(This makes a batch of 12)
Muffin cups or pan spray
1 1/2 cups of chopped pecans
1 1/2 cups of firmly packed brown sugar
1/2 cup of flour
2 large eggs
1 stick of butter(melted)

Directions:
Preheat oven to 350 Degrees
Add cups to your muffin pan or spray with non stick pan spray( I let my 7 year old do this step, hence the puddles of it over the top of the pan, ha!)
In a mixing bowl you will need to mix all of your dry ingredients, pecans, brown sugar, and flour
In a separate, smaller bowl, beat the two eggs and mix with the stick of melted butter
Pour egg & butter mixture over dry ingredients and mix thoroughly
Fill each muffin well 2/3 full with mixture
Bake in oven for 23 minutes(or until no longer runny, should come out as a bread consistency)
Once removing from oven, immediately transfer muffins to a wire rack for cooling to keep edges of muffins soft

Once cool, enjoy this amazing fall treat!
